Salted Caramel Cheesecake

I've tried and tested a new cheesecake recipe that I found online and I'll link the original recipe at the end of my post for if you want to check it out. I love cheesecake and I absolutely love salted caramel, so when I saw this recipe I knew I had to make it and give it a taste, before I start though I should say the recipe had cornflour in the list of ingredients but when following the recipe it wasn't stated when and where to use it, it wasn't till the cheesecake was in the oven that I noticed I hadn't added any cornflour, so shall we get baking?


Ingredients:
300 g digestive biscuits
150 g unsalted butter, melted
500 g cream cheese
200 g golden caster sugar
2 eggs
150 ml cream
1 tsp vanilla extract
1 tbsp cornflour
250 g caramel or Dulce de leche
50 ml cream
1 tsp salt

I started off by putting the biscuits in either a food processor or blender and leaving them till they were like breadcrumbs.

Next add the butter to a pan and melt it so it becomes a liquid.

Once the butter is melted, pour into the crushed biscuits, I mix it in a bit at a time so I don't add too much butter.

Flatten into either a pie dish or a cake pan, I always use a pie dish for my cheesecakes, then place in the fridge to set

Preheat the oven to 250C, While the base is in the fridge make your cheesecake filling, put the sugar and cream cheese into a bowl and mix until well combined.

Next add the eggs, vanilla extract, cream and cornflour and mix again until combined well.

Pour the filling over the chilled biscuit base and place into the oven for 10 minutes, turn the heat down to 100C and bake for a further 60 minutes. Once done allow the cake to cool in the oven.

When the cake has cooled enough start on your caramel topping, heat up the caramel, cream and salt in a pan and stir to blend.

Pour the sauce over the cooled cake and then place in the fridge for at least 3 hours to set, when needed decorate as desired.

I ended up with a decoration I didn't need when I took the cheesecake out of the fridge, as there was Skye's hand print in it as she said she "fell" when looking in the fridge.

This is a cheesecake I will definitely make again as it was really nice, but I think next time I'll add a bit more salt as the caramel didn't really taste like salted caramel. It was enjoyed also by my mum and Skye, even though I think I was the one that ate most of it. I think the next time I make it I will also decorate the top of it with some chocolaty goodness to see if it adds more to the taste.

Monsta X - 1st Album Repackage: Shine Forever

Back in June, I shared with you the first full length album Beautiful from Monsta X, this weeks post is their repackaged album from that album and bringing their the Clan Series to an end.

On the 2nd of June Monsta X released a teaser through their official social media accounts on Twitter, Instagram and Facebook, saying Shine Forever Coming Soon, the very next day on the 3rd of June, Monsta X released the Shine Forever schedule revealing this would be a repackaged album, on the 4th of June the individual image teasers started, starting with Wonho.
 On the 5th of June I.M's teaser images were released.
 On the 6th of June Minhyuk's teaser images were released.
 On the 7th of June Jooheon's teaser images were released.

 On the 8th of June, Hyungwon's teaser images were released.
 On the 9th of June Kihyun's teaser images were released.
 On the 10th of June Shownu's teaser images were released along with the group image teaser.

On the 14th of June the Shine Forever M/V teaser was released.

On the 19th of June Shine Forever was released both physically and digitally along with the release of the Shine Forever M/V.

Back in May after the success of their Acoustic version of Beautiful, Monsta X had a stint performing the track on music shows before announcing their comeback and starting promotions for Shine Forever.

Like on previous releases Jooheon and I.M participated on the 2 new tracks for their repackaged album, with them both helping to co-write Shine Forever and Gravity.

Shine Forever peaked at No.1 on the Gaon Albums Chart, giving them their first No.1 charting album, Shine Forever also peaked at No.10 on the Billboard World Albums Chart, Shine Forever also topped the iTunes Albums Chart in 21 countries including; the USA, France, Germany, Spain and the U.K, with the group later saying they wanted to be able to perform in all the countries that Shine Forever had gone in high stating they wanted to thank their fans for supporting them.

Shine Forever has gained 6,157,132 million views so far through their official YouTube channel and 1,390,258 million views through 1theK's official YouTube channel, giving the Shine Forever M/V a total of 7,547,390 million views so far.

Shine Forever was released in 2 versions: A version which is the main version and a B version which is the Complete X-Clan version, the main version follows a bright concept, while the Complete X-Clan version follows all their X-Clan concept, showing also a darker concept. The main version comes with a photobook, white stickers, Shine Forever postcards and a random member photo card, mini fold-out poster and Cd design. The Complete X-Clan version comes with a photobook, stickers, random member photo card, mini fold-out poster and Cd design. Both versions have different pictures and layouts but both come in the same style of clear packet for it's packaging.

I have the main version and I am waiting on my Complete X-Clan version to be signed by one of the members and sent out to me, I love the layout and colours of the main versions, I also love that the Cd, stickers and postcard are each in their own card pouch, this may also sound odd but the album even smells nice. I love the pictures and how they separate the members in to little groups for pictures especially Jooheon, Hyungwon and I.M as it reminds me of the No Mercy final performances, which I will be sharing with you in a later post. My only disappointment for this repackage album and I'm sure a lot of MonBebe's agree with me is that the Acoustic version of Beautiful wasn't included on the track list, it's such a beautiful version of the song. I also feel like I need to mention Gravity and how my jaw dropped hearing Shownu's vocals on this track, something a lot of fans praised the track for.

Monsta X continue to keep impressing me with everything they do, they've recently just released a digital summer song with Lipton Ice Tea and even thought it's not a sound they usually go with it's still an amazing song that they pulled off, it's definitely a summer hype song, and helps me forget about the wet summer we seem to be getting at the moment here in the UK.

The next time I'll be sharing Monsta X with you will be when I'm sharing with you their debut mini album, at the moment there are no news for any comebacks as at the moment they are on tour with their first world tour, which they have just completed their European leg, I'm glad that even though they are really underrated in South Korea, they are acknowledged internationally.
